Banana Coconut Pancakes
There's nothing quite like waking up to a wonderful breakfast
on a weekend morning... These pancakes are delicious and yes, 100% healthy! Thanks Stephanie for sharing the recipe with us!

Ingredients

2 banana
-
3 eggs

3 tbsp. coconut flour

1 vanilla bean pod

1 tsp. organic vanilla extract

1/4 tsp. baking soda

1/4 tsp. baking powder

Pinch of salt

Instructions

Place the two banana in a food processor and blend until you have a smooth puree. No lump left.

Crack the eggs in the food processor and blend again to mix well.

Next you will need to extract the vanilla beans from the vanilla pod. Using a knife cut the vanilla pod in 2 length wise and scrap the vanilla pod using the tip of your knife. Put the vanilla bean in the food processor.

Add the coconut flour, vanilla extract, baking soda, baking powder and sea salt.

Blend again until you have a smooth puree again.

Place a skillet over medium heat and melt 1 tbsp. of coconut oil or ghee and add 1-2 tbsp. of pancake batter to the pan. 2 tbsp. of batter will give you 3-4 inch thick pancakes. Adjust to your taste.

Cook on each side until brown and crispy pancakes.

Spread coconut butter or simple butter over your pancakes and enjoy!
