Banana Coconut Pancakes

 

There's nothing quite like waking up to a wonderful breakfast

on a weekend morning... These pancakes are delicious and yes, 100% healthy! Thanks Stephanie for sharing the recipe with us!

Ingredients

  • 2 banana

  • 3 eggs

  • 3 tbsp. coconut flour

  • 1 vanilla bean pod

  • 1 tsp. organic vanilla extract

  • 1/4 tsp. baking soda

  • 1/4 tsp. baking powder

  • Pinch of salt

Instructions

  • Place the two banana in a food processor and blend until you have a smooth puree. No lump left.

  • Crack the eggs in the food processor and blend again to mix well.

  • Next you will need to extract the vanilla beans from the vanilla pod. Using a knife cut the vanilla pod in 2 length wise and scrap the vanilla pod using the tip of your knife. Put the vanilla bean in the food processor.

  • Add the coconut flour, vanilla extract, baking soda, baking powder and sea salt.

  • Blend again until you have a smooth puree again.

  • Place a skillet over medium heat and melt 1 tbsp. of coconut oil or ghee and add 1-2 tbsp. of pancake batter to the pan. 2 tbsp. of batter will give you 3-4 inch thick pancakes. Adjust to your taste.

  • Cook on each side until brown and crispy pancakes.

  • Spread coconut butter or simple butter over your pancakes and enjoy!
