Poached Fish

 

We consume way too much meat, so fish can be a very healthy meal! This Kids Naturally recipe is not only healthy, but super easy to make and turns out great - as long as you don't overcook it!

It will only take 15 minutes to make!

Ingredients

 

  • 1 piece of salmon (or rainbow trout) per person (you can be the judge of the size of the serving, based on what you think they will eat... Usually, 1 serving is about 1/2 lb. per person.

  • 1 Tbsp. capers

  • 1 Tbsp. grated or finely chopped garlic

  • 2 Tbsp. finely chopped onion

  • 2 Tbsp. Tamari sauce (gluten-free soy sauce, usually in the health-food aisle of your grocery store)

  • Juice of 1 large lime (or lemon)

  • 2 Tbsp. butter

  • optional: 1/2 cup of white wine

 

 

Instructions

Heat butter in a large pan on medium-high, then add skin-side of your fish to sear it slightly.

 

Once the skin is seared and pan begins to smoke slightly, turn the heat down to medium-low and add balance of all ingredients. Cover tightly with lid and allow to cook for 5 minutes.

 

After the first 5 minutes, add 1/2 cup of water (or wine if using) and cover with lid once again, turning heat down to low. This will allow fish to 'steam' in the juices for an additional 10 minutes.

Serve hot on a bed of rice or quinoa.
