
Carrot Turmeric Breakfast Cookies
Silver & Gold Magazine created these delicious and healthy cookies,
so good you can even enjoy them for breakfast!

These gluten-free cookies use a premix of President's Choice gluten-free flour mix, and a whole lot of fresh healthy ingredients to boost your immune system and satisfy your morning appetite... give them a try!
​
You can even add some chocolate chips inside the mix, or various nuts and seeds
depending on your preference. Make these cookies ahead of time and free them
for your next get-together... yum!

Here's what you'll need (makes 2 dozen cookies):

3 sweet (thin) carrots, peeled and grated

1/3 Cup almond milk

1/2 Cup maple syrup (no sugar required after this!)

1 egg
-
1/2 Cup oatmeal
-
1 tsp. turmeric powder
-
1 tsp. cinnamon
-
1/2 tsp. ginger powder
-
1 Cup gluten-free flour
-
1 Cup almond flour
-
1 tsp. orange extract (or vanilla, if you don't have any orange extract)
-
2 Tbsp. chia seeds
-
1/3 Cup chopped walnuts (optional, or slivered almonds, or chocolate chips)
How to make these amazing breakfast cookies:

Preheat oven to 350°F, and prepare two baking sheets with parchment paper.

Combine the first 4 ingredients in a large bowl, and mix well. Then add all other ingredients and mix gently until well combined.
​
Drop tablespoon-fulls of the batter onto baking sheets, leaving an inch in between each dollop to allow for spreading during baking. You may also make them smaller, if you prefer crunchier cookies.
​
Bake for approximately 25 minutes, or until golden brown around the edges.
