At Silver and Gold Magazine, we Love Love Love sharing our healthy recipes! We are big fans of soup, and everyone knows that in order to make a truly good soup, you need a truly good base.

This recipe will show you how to EASILY make the best chicken broth, and to transform it into a delicious and healthy chicken soup.

 

Not into chicken soup? NO PROBLEM. You can take this most delicious chicken broth recipe and use it as a base to make our leek and potato soup, or even a vegetable based soup. 

​

Healthy soup is always in style! Have you tried soup for breakfast? It's not only delicious, hearty and satisfying, but it's very healthy and full of nutrition – much better than cold cereal or sugary muffins!

Ingredients

  • 3 large carrots, roughly chopped (we used both orange and yellow carrots)

  • 1 large or 2 small onions, chopped in quarters with skin left on

  • 3 garlic cloves, as is, with skins left on (they will melt nicely, leaving just skins floating about the broth)

  • 3 large chunks of ginger, skin on

  • 2 stalks of celery, roughly chopped

  • 1 package of button mushrooms or cremini

  • 1 whole organic chicken

  • 10 cups of water

  • 1 Tbsp. peppercorns

  • 1 Tbsp. sea salt

  • 1 Tbsp. of each: rosemary, thyme, parsley (use whatever you have, fresh or dried)

  • 1 Tbsp. apple cider vinegar (helps the bones release the delicious marrow for flavour)

Method

Combine all ingredients in a large stock pot and bring to a boil. Once it begins to boil, cover and set on low. Check sparingly to ensure it's not overboiling. 

​

After a few minutes, scoop off the 'scum' floating on the top of the pot – this is the proteins of the chicken rising to the top. Leaving them is okay, but may make your broth cloudy.

Continue to simmer, covered, for 3-4 hours. This will not dry out the chicken but it will infuse it will flavour. The length of time is necessary to release all the chicken flavour into the broth, as well as break down all the marrow inside the bones – what makes the chicken broth so tasty and healthy!

Stir occasionally to ensure all the veggies and chicken are releasing their flavour.

After 3-4 hours, turn off pot and allow to cool slightly (about 15-20 minutes). Then strain the liquid into a large bowl, and put the balance of the food pieces (chicken, veggies, etc.) into a separate large bowl.

Allow the chicken/veg bowl items to cool enough to handle by fingers, as you will be separating the chicken from the bones next, and discarding the onion skins.

When you've completed this most important task of getting rid of all the bones and onion/garlic skins, then you're ready to make your most amazing chicken soup!

This is where the fun begins, as you can put anything you want in the chicken soup recipe!

We began with adding a bit of the chicken broth and fat to the bottom of the SAME stock pot we used previously to make the broth. 

​

Then we added one chopped onion and let the onion 'sweat' until it's slightly transparent. 

​

Then we add your most delicious chicken broth, which you just made.

Next, pick out and add the carrots and mushrooms from your veggie/chicken bowl. 

​

Add 1 cup of rice or quinoa if you desire, and allow to simmer for 15 minutes until it's cooked through. Then add the chicken chunks to warm up inside the soup, and adjust seasoning to taste. 

 

Now you can enjoy your most delicious chicken soup, made from scratch!
