Easy, healthy, gluten-free crepes

 

You'll be passing this Silver & Gold crepes recipe around to your friends and family, because it's just SO EASY and delicious!

These crepes use just a few ingredients and can be stuffed either with a sweet filling like jam or fresh fruit, or can be enjoyed for dinner with a taco meat stuffing. Enjoy!

Ingredients: (for about 15 crepes, 7" diameter)

  • 1 Cup brown rice flour

  • 1/4 tsp. salt

  • 2 eggs

  • 1 Cup milk, or milk substitute

  • 1 Tbsp. melted butter or butter substitute

Here's how:

Beat all ingredients together in a bowl, until smooth and lump-less. 

Heat a medium-sized pan, to medium temperature, then grease just a touch with oil or butter (only needed for the first one).

Using a 1/4 Cup measuring spoon, pour the mixture into the pan and distribute to shape desired.

When crepe starts to lift around edges and bubble in the middle (about 30 seconds) then flip to other side.
