
Wondering what to make with frozen corn?
Try this fresh and zesty corn salad!
Let's face it: Nothing compares to fresh corn, especially when it's in season.
But off season, frozen corn is second best... but what are you going to do
with it, aside from steam it and eat it as is? Corn salad!
This beautifully easy to make corn salad is zesty with a hint of lime and cilantro,
and crunchy with bits of red pepper and onion... it's perfect as a side dish and
also as a snack in the afternoon when you need just that bit of freshness.
Try it as a side dish to our beautiful shrimp burgers!
Easy to make in just a few minutes!

To make enough to satisfy 4 people:

2 cups of frozen corn, thawed in a bowl of warm water, or steamed for a few minutes

1/2 onion (red or white), diced
-
1/2 red pepper, diced
-
1 Tablespoon of fresh cilantro, washed and chopped
-
2 Tablespoons of fresh spinach, chopped
-
1 Tablespoon of oil (olive or grapeseed are best, but use whatever you have on hand)
-
juice of one whole lemon or lime
-
salt and pepper to taste
Here's how to make it:

Simply combine all ingredients in a large bowl, and mix well

Allow for the corn salad to sit and absorb the juices of your dressing, prior to consuming

If, surprisingly, you have any leftovers, place in a covered container in the fridge for a day. Make it ahead of time too, or prepare the night before for a party or get-together.
