Fresh Quinoa Salad


- 1 C. Quinoa (white or red)
- 1/3 C. hulled, unsalted sunflower seeds
- 1/3 C. toasted pumpkin seeds
- 1/2 small onion, julienned
- 1 bunch radishes, julienned
- 1 red pepper, julienned
- 1 large carrot, grated
- 1/4 C. dried cranberries
- 1/4 C. lime juice
- 1/4 C. lemon juice
- 1 C. cilantro, chopped
- 1 jalapeño pepper, diced (optional… some like it hot!)

In a small pot add 1-1/2 C. water and bring to a boil. Add Quinoa and boil until water is absorbed (approx. 5-7 minutes). Set aside to cool.
Combine all ingredients in a bowl and mix well. Refrigerate for 30 minutes and enjoy!


*Quinoa (pronounced Keen-wah) is a wholesome, super-grain. It's recommended to rinse thoroughly prior to boiling. This salad may be prepared the night before serving.
