
Lentil & Veggie Salad
At Silver & Gold, we love the fact that legumes have numerous health benefits – especially that they're rich in fibre, which will help you feel full and satisfied for longer than any other carb-high meal!
This salad can be enjoyed hot or cold, and it's great
reheated as a lefover meal.
Dried lentils are especially tasty: Simply soak overnight and rinse well before cooking. If you prefer to use canned lentils, be sure to drain the water and rinse them well to avoid gas in the stomach.

Suggested Ingredients:
• 1 15 oz. can lentils, drained and rinsed well
• 2 Tbsp. fresh parsley
• 1 large tomato, chopped
• 1/2 small red onion, sliced
• 1/2 red or yellow bell pepper, chopped
• 1 Tbsp. feta cheese (optional)
Dressing:
• 1 lemon
• ¼ cup olive oil
• 2 cloves garlic, minced
• ½ Tbsp dried oregano
• ½ tsp salt
• fresh pepper

Cumin to Relieve Gas – Gas has many causes – poor chewing before swallowing, slow digestion, consuming too much animal protein or un-rinsed legumes prior to cooking, lack of water intake, lack of exercise, and more.
When you’re troubled by gas, simply heat up 1 cup of water almost to the boiling point, then add 1 teaspoon of cumin powder or 1/2 teaspoon of cumin seeds and mix well. Add a bit of lemon and honey if desired.
