Miso Glazed Pickerel

Miso Marinade
•1 1/2 tbsp miso paste
•3 tbsp water
•1 tbsp pickled gari*
•1 tbsp pickled gari* brine
•1 small clove garlic minced
•1 tbsp fresh coriander chopped
•1 1/2 tbsp Mirin** (substitute lemon lime soda)
•1 tbsp fresh squeezed lemon juice

Preparation
Dissolve miso paste with water and add all ingredients.
Marinate with 1lb of fresh cleaned pickerel and refrigerate for approximately 3 hrs. 

Fish Preparation
Remove fish from marinade. Place fish on a baking sheet lined with parchment paper and bake approximately 10-12 minutes @ 375°F until opaque, or until fish reaches an internal temperature of 158°F.
Serve with grilled baby Bok Choy and Oyster mushrooms.

 

*Gari is a form of ginger, usually eaten between dishes of Sushi, as it is said to help cleanse the palate and has antiseptic properties.

**Mirin is a form of Japanese rice wine, less alcoholic than Sake.
