No-bake Energy Balls


• 1 Cup oatmeal
• 1/2 Cup natural peanut, cashew or almond butter (We used almond butter) 
• 1/2 Cup ground flaxseed, OR 1/4 Cup ground almonds
• 1/3 Cup honey
• 1 tsp. vanilla extract
• grated coconut for rolling

Mix all ingredients in a large bowl. Form into small balls (about 1” diameter) using a spoon and place on a plate covered with parchment paper and a layer of grated coconut. Refrigerate slightly to compress all ingredients together.


*They are slightly sticky, naturally sweet, about the consistency of a truffle. Recipe makes about 18 balls and is adaptable to changing some of the ingredients, ie: adding chocolate chips. Keep in the refrigerator so they're not as 'sticky' to touch.
