
Paleo (grain-free)
Cauliflower Everything Buns
These Silver and Gold Paleo (or 'grain free') buns are made with cauliflower and a whole lot of delicious seeds, to satisfy your bread cravings yet fill you up with a lot of goodness!
Try these as a replacement to the 'everything bagel' recipe, but without the high-carb content. You may replace (or omit) any of the toppings suggested.
Makes approximately 12 buns.

Ingredients

3 cups shredded cauliflower (pulse in the processor)

2 Tbsp. almond flour

2 Tbsp. coconut flour

2 eggs

1/2 tsp. garlic powder

1/4 tsp. sea salt
TOPPING:

1/2 tsp. poppy seeds
-
1 Tbsp. sesame seeds
-
1 Tbsp. dried minced onion
-
1/2 tsp. sea salt
Method
Preheat oven to 400°F, and line baking sheet with parchment paper. In a food processor, pulse cauliflower until rice-consistency (about 30 seconds), then squeeze out the excess liquid – this is very important, otherwise they will turn out 'mushy'.
In a bowl, combine all ingredients minus the topping ingredients and mix well with a fork. In a separate bowl, combine topping ingredients and mix well.
Using your hands, make 12-14 balls from the cauliflower mixture and place on baking sheet, flattening with your hands ‘til about 1/2” thickness. Sprinkle with topping and press lightly into the top.
Bake for approximately 30-40 minutes or until golden brown. Remove from oven and place immediately onto cooling rack.
NOTE: if you prefer crunchier or dryer buns, you may turn the oven temperature down to 350°F and bake for approximately 50-60 minutes. Do not allow to burn at the bottom!
