Quinoa "meat" balls
(meatless and delish!)

 

 

Ingredients

  • 2 cups cooked quinoa

  • 2 cups cooked chickpeas or lentils, mashed

  • ¼ cup diced red bell pepper

  • ½ cup diced onion

  • 2 cloves garlic, minced

  • ½ cup bread crumbs (or gluten-free flour)

  • ¼ cup freshly grated Parmesan 

  • 1 Tbsp. dried Italian seasonings

  • 1 Tbsp. dried paprika

  • 1/2 tsp pepper

  • sea salt to taste

  • 2 eggs

  • 3 Tbsp. olive or grapeseed oil



Preparation

Preheat oven to 375°F

 

In a large mixing bowl, combine all ingredients well, very similar to making meatballs.

 

Using your hands, shape into 1-1/2” balls (this recipe will make 2 dozen balls) and place on 2 cookie sheets that have been covered with parchment paper.

 

Drizzle with oil, then bake for 15 minutes, turning once half-way through.

 

These Quinoa balls will be crunchy, therefore you may choose to dunk them in your favourite tomato sauce... Love 'em up!
