Succulent Shrimp Burgers

Silver and Gold has done it again with another great recipe!

Whether you're a pescetarian (that is, a vegetarian that also eats fish and some shellfish), or if you just love the taste and health benefits of shrimp, this is a recipe for you!

These shrimp burgers are juicy, zesty, and chunky with large pieces of shrimp that give that beautiful bite to satisfy any shrimp lover's meal!

Serve them as is with rice on the side, or have them on a bun... they are easy to make in just a few minutes! All you need is a food processor and the right ingredients. 

To make about 7 of these delicious shrimp burgers you will need a food processor, plus:

  • 1/4 cup of oil (we like to use grapeseed oil)

  • 454 grams of frozen or fresh raw shrimp (like most frozen shrimp bags, or half a kilo). Defrosted, peeled. 

  • 3 Tbsp. of mayonnaise or vegennaise

  • 1 Tbsp. dijon mustard

  • 1/4 cup of breadcrumbs

  • 1 egg

  • 1/2 onion, diced

  • 2 Tbsp. fresh coriander /cilantro (or parsley, if preferred) 

  • 1/2 tsp. garlic powder or 2 cloves of fresh, minced

  • juice of 1/2 lemon or lime

  • pinch of cayenne pepper (optional)

  • salt and pepper to taste 

Here's how to make them:

  • Separate your shrimp into two parts: One will go into the food processor, the other will be cut into small 1/2" bite-sizes and placed inside a large bowl

  • In the food processor, along with the shrimp, add all ingredients except for the onion, coriander, and oil. Pulse for 4-5 seconds until shrimp has minced and all ingredients are combined. 

  • Add processed dough to the bowl with the other half of the chopped shrimp.

  • Add egg and coriander, and mix well to combine. 

  • Fry in low-medium heat in a large skillet, using the oil. Turn over when browned.

  • When cooked on both sides (approx. 3 minutes per side), remove and set on a paper towel for a few minutes.

  • Enjoy with a few squeezes of lemon juice, or with mayo, or as a burger on a bun with your favourite toppings!
