Strawberry Bread

• 3 Cups whole wheat pastry flour
• 2 Cups cane sugar
• 1 tsp baking soda
• 1 tsp cinnamon
• 1 tsp salt
• 20 oz Ontario strawberries, frozen
• 1 Cup grapeseed oil
• 4 eggs


Preheat oven to 350°F. Grease and flour 2 loaf pans. Combine dry ingredients; mix well. Make a well in the centre of the mixture and pour all liquid ingredients into it. Mix with spoon. Pour mixture into pans and bake for 1 hour, until tester inserted in centre comes out clean. Can be frozen. Slice thinly before completely thawed.


Yield: 1 loaf
