


Sugar-free, pectin-free
strawberry jam
Note: This recipe can be made using any type of fruit.

Ingredients:
• 4 Cups quartered strawberries
• grated rind of 1 lime, juice of 1/2 lime
• 2 Tbsp honey
• 1 heaping Tbsp Chia seeds
Method:
Place strawberries in a small pot on medium-low heat and stir occasionally until fruit has become mushy (approx. 5 minutes). Add lime rind and juice, then mash using a potato masher til desired consistency. Add honey and Chia seeds and simmer for another minute.
Remove from heat and allow to sit for another 2 minutes until slightly cooled.
Place jam in Mason jars or glass bowl, uncovered, until almost cool. Cover and refrigerate as usual – will keep for about 10 days.
Serve on toast for breakfast, as a sweet and natural snack, or even on your favourite yogourt and granola recipe.
Yield: About four small Mason jars (great as a gift idea!)
