Maple-Syrup
Banana Muffins

These muffins are SO delicious and super healthy because they have no sugar! They are super easy to make, any child can make them with their parent. Especially if you use up those ripe bananas you have hanging around the kitchen. Let me know what you think!

 

Ingredients

• 1/3 Cup melted coconut oil

• 1/2 Cup natural maple syrup

• 2 eggs

• 3 mashed ripe bananas

• 1/4 cup milk (I used almond milk)

• 1 teaspoon baking soda

• 1 teaspoon vanilla extract

• 1/2 teaspoon salt

• 1/2 teaspoon cinnamon

• 1-3/4 Cups whole wheat flour     

• 1/3 Cup oats

• 1 teaspoon coconut sugar for
  sprinkling on top

 

Here’s what you do: 

  1. Preheat oven to 325°F degrees. Grease 12 muffin cups with butter, or line them with muffin cup paper.    

  2. In a large bowl, beat the coconut oil and maple syrup together with a whisk. Add the eggs and whisk well. Mix in the mashed bananas and milk, baking soda, vanilla extract, salt and cinnamon.

  3. Add the flour and oats to the bowl and mix with a large spoon. 

  4. Pour the batter in the muffin cups and sprinkle the tops of the muffins with a light sprinkling of the sugar. Bake muffins for 23 to 25 minutes, or until a toothpick inserted into a muffin comes out clean.

 

Yield: 12 muffins that will leave you craving for more!
