Summer Fresh Watermelon Salad

Maple Balsamic Dressing:
• 1/4 cup olive oil
• 2 tbsp balsamic vinegar
• 1/4 cup pure organic maple syrup
• 2 tbsp dijon mustard
• 1 clove fresh garlic minced
• 1 tbsp shallots chopped fine chopped
• 1/2 tsp sea salt
• 1/2 tsp black pepper 

• 8 cups thick-cut watermelon
• 2 cups baby arugula 
• 1 cup cucumber, sliced 
• 1/2 cup thin sliced red onion
• 3/4 cup (3oz) feta cheese, crumbled
• 1/2 cup chopped toasted pecans

Combine all salad dressing ingredients in a mason jar and shake well.
Combine all salad ingredients in a bowl with desired amount of salad dressing and finish with cracked black pepper.
